Organic: no use ofโฏpesticides,โฏherbicides, synthetic fertilizer in the vineyard. No rules about handpicking, machines can be used. Use of selected yeasts for fermentation. Use different organic additives and addedโฏsulphitesโฏ(up to 205 mg/L).โฏโฏ
Biodynamic (Demeter): follows the Rudolph Steiner Method. Chemical fertilizers and pesticides are forbidden, grapes are handpicked and during the winemaking process no additives or selected yeasts are used, only a bit of sulphites (up to 90 mg/L).โฏ
Natural: nothing is added, and nothing is taken away.โฏNo added sulphites or just a few (up to 30 mg/L).โฏJust fermented fruit juice.

These are naturally present in any wine in minimal quantity.
They are mostly added during bottling to help in preserving the wine and transport.
They also provide help when added during fermentation to control the crazyness of it and make sure the wine ends up drinkable.
They are often linked to headache when drinking wine.It is mandatory to write it on the label starting 10mg/L.
The WHO (World Health Organisation) recommends a maximum of sulfites of 0.7mg per kg of body weight per day.โฏSoโฏa person of 65kg should not have more than 45mg per day.โฏAt 350mg/L โ aโฏfullโฏglass would put you over the recommended max.โฏ

Everyone can enjoy as he pleases, but in general, remember that serving chiller will calm down aromas.
Red wine are served around 16ยฐ-18ยฐ C.
Beaujolais or โsummerโ red, can enjoy a bit chilled 14ยฐ-16ยฐ C.
White wine are served around 10ยฐ-12ยฐ C. Heavy white will feel lighter if chiller, heavier and more expressive when serve in higher temps.
Rosรฉ & Sparkling wine are served around 8ยฐ-10ยฐ C to have a more refreshing experience. They can be served like white wine to express more flavors and enjoy their aromas.
Wine bottles outside of fridge will usually get warmer for about 1ยฐ C per hour. -
Your wine is defective or has gone bad? Never fear, we'll be happy to take it back. Simply report the defective bottle(s) within two (2) months of their date of purchase and we'll issue you a refund. Depending on the quantity and the wine, we reserve the right to inspect the defective products first. The bottle(s) should be at least two-thirds full. We'll replace the bottle(s) or send you a voucher in the value of the returned items

Depending on the wine it can happen that the first serving feels fizzy. This should go away by letting the wine breath a bit (20min or so). It should be enough to let the CO2 goes and remove that kind of โclosedโ smell.
